Our favourite foodie Blake Proud joined Kirste and Dan to share his Lamb Kofta recipe.
The Koftas are made from lamb mince. Blake mixed in braised onion and garlic, parsley, toasted cumin and coriander seeds, and lots of salt. The salt helps to draw out the moisture from the lamb and allows it to stick together. Mix all the ingredients then roll them out and stick them in the fridge for a few hours.
Tzatziki sauce pairs perfectly with the Koftas. You can make your own by mixing Greek yoghurt, garlic, olive oil, salt and pepper. For some freshness, Blake made a salad from cucumber and red onion. Simply crush them together with some salt and let them sit in a bag for 20 minutes. Squeeze out all the moisture and toss it with fresh mint, lemon juice and olive oil.
